<p>Hood Cleaning (or hood vent cleaning) should be done by a &#8220;properly trained, qualified, and certified company&#8221; according to NFPA #96 guidelines 8-3.1. Some restaurant owners like to go with the lowest bid in an attempt to save money.</p>

<p>The system above has an exhaust fan pulling the air out of the kitchen at the same time the cooler is replacing it with fresh air. This set up not only allows air to be pulled out by the exhaust fan but actually helps PUSH the air out.  The two fans (the cooler fan and exhaust fan) work together to produce the best condition for the kitchen air and the least strain on fan motors, keeping costly repairs to a minimum.<br />

<p>This second set up works but is inefficient. There is no air being pushed in to the kitchen, it is only drawn in by the fan, which makes your fan work twice as hard, and will not cool your kitchen the way it should.</p>

<p>This third setup will is almost useless. No make up air being drawn in to the kitchen at all, and the fan working very hard to get any hot air out of the kitchen at all.</p>
<p>In order to have a cooler kitchen, you must have the same amount of air being pushed in by a swamp cooler as you have being pulled out by your exhaust fan. Once your restaurant kitchen set up this way, you will notice a much nicer environment to work in, and your chefs and kitchen staff will be much happier and more productive.</p>

			<content:encoded><![CDATA[<p>An important part of your regular <a href="http://www.bryanexhaust.com">restaurant exhaust hood system maintenance</a> is the cleaning of your kitchen hood filters. If your filters are not kept clean then two things happen. The first thing is that your filters become laden with grease and this creates a fire hazard. In other words , if you have a fire on the cook line, the filters will likely catch fire and continue to burn sending fire up the ducts.    <P>  The second thing that occurs is the filters become clogged with grease build-up. This causes the flow of air to become reduced. When this happens your fan uses more energy costing more money tom operate and degreasing the life expectancy of the motor. Additionally you are likely to have smoke problems in the kitchen because the air flow is reduced.       <P>  The way to handle this is to inspect your filters daily and when they begin to build up a film of grease take them out and wash them. There are a few companies still available that will come to your location every few weeks and change them for you but this can get very expensive.       Most restaurants have a dishwasher. If you have one then the easiest way to clean them is first spray them with a degreaser, let them soak for a little while then run them through the dishwasher.     If you don&#8217;t have a dishwasher, just put them in the sink at night with a degreaser and fill the sink with hot water. Then when you come in in the morning, just rinse them off and put them back in the filter housing. How often should this be done?     <P>  In some cases daily if your cooking makes a lot of smoke. If not, at least once per week will assure you of having clean filters and no airflow blockage.    <P>  Never operate without your filters in place. They are an important part of your fire protection system, and they do remove a lot of the  grease that would otherwise be deposited on the duct system and fan blades.     <P>  If you are are burning anything solid for fuel (wood, charcoal, etc.) NFPA 96 recommends having spark arrestor filters installed. These filters are designed to stop red hot embers from going in to your kitchen exhaust system and starting a fire. Keep in mind that the service was done by a large company, certified by a kitchen exhaust cleaning association that claims to set higher standards for its members. This is not some fly by night &#8220;blow and go Joe&#8221;.</span></p>

<p style="text-align:left;">Ok now see the light brown spots, those are all the areas that the guy cleaned on the service. Not the worst I have seen, but he definitely missed some spots. Now we will take a closer look at the fan blades.</p>

<p style="text-align:left;">These fan blades are caked with grease and will cause this fan to go out of balance, start shaking, and anyone that has stood under a hood while the fan is shaking knows that the entire hood is going to start shaking. If it doesn&#8217;t get handled soon, say goodbye to your fan.</p>
<p style="text-align:left;">So what should you learn from this? Don&#8217;t ever take your hood cleaning companies word for it. Demand that they take photos of the service. It will hold them accountable for their work and give you the piece of mind that the job was done right.</p>
